Our passion at BIVIO is for authentic Neapolitan pizza. After several visits to Naples we fell in love not only with the city but also the
wonderful cuisine, in particular, the pizza. We discovered that this simple food has a long colorful history and the passion of the pizzaioli
is legendary.  "It's about the dough" is the phrase we heard again and again. The flavor of this simple ingredient with the intense heat of
the wood fired "forno" was spellbinding and
our new adventure began. True to Neopolitan tradition we construct our pizza using "00" flour from Naples, San Marzano tomatoes, extra
virgin olive oil, fresh basil, fior di latte or bufala mozzarella and sea salt. Our dough is gently
mixed in a spiral mixer using a natural levain
with a slow fermentation, then baked in our custom made wood burning oven at high temperatures for about 90 seconds.  As our passion grew stronger, we recognized that we had come to a fork in the road, un bivio.  It
was time to create this old world pizza for you.  So we had the Italian master Nobile Atti build
our beautiful oven and now BIVIO is open for
you to relax, enjoy, and most of all discover
your own passion for eating authentic pizza Napoletana.  At BIVIO all of our dishes are
made with the freshest and highest quality ingredients.  We hope you enjoy our selection
of "il pizze".
